Sweet Pepper & Gorgonzola Gnocchi

Sunnier days are almost here, which has got me craving sweet red peppers. But the evenings are still chilly here in the UK, gnocchi and cheese are still very much welcome. 

This dish is a perfect inter-seasonal plate of food. The sweet peppers, cooked down with care are the perfect accompaniment for salty, sharp gorgonzola dolce. 

A dusting of Parmesan and popped under the grill for extra mid week soul support. Not a necessary step, but I did not regret it. 

Ingredients (serves 2)

2 x Romano peppers 

1 pack of gnocchi 

1/2 pack of Gorgonzola dolce 

1-2 cloves of garlic 

1.5 tbsp Olive oil 

Pepper

Grating of Parmesan (optional)

Method 

  1. Chop the peppers roughly, heat the oil in the pan. Add the pepper and cook on a high heat until you start to get some browning. 

  2. Stir in chopped garlic, add pepper optional small pinch of salt (the cheese will do the seasoning) reduce the heat to low medium put the lid on and let cook down until the peppers are soft, browned and sweet. 

  3. Boil salted water. Take the peppers off the heat add in the Gorgonzola and stir until melted, whilst cooking the gnocchi.

  4. Add the gnocchi into the peppers and cheese with a splash of the cooking water. 

  5. (Optional step)Add the Parmesan on top and bake under the grill until browned and bubbling 

  6. Enjoy!
