Seasonal Salads ~ New Potato & Radish Salad with an Anchovy Dressing
Salads don’t have to be boring, bland or unsatisfying. They can be packed full of delicious flavour and keep you full and satisfied.
They are also a perfect vessel for showcasing seasonal produce.
New potatoes, radishes, lettuce leaves ~ all at their peak at this time of year. Here I’ve paired them with crunchy vinegary pickles, and a gorgeous salty, punchy dressing with anchovies , lemon, and mustard dressing.
Serves 3-4 (dependant on portion size)
Ingredients
For the salad:
750g of new potatoes (or one small bag)
4-5radishes
5-6 gerkhins (optional)
1x head of lambs lettuce
3-8x eggs - soft boiled (best served with 1-2 eggs per person)
For the dressing:
4-5 anchovies
2tsp wholegrain mustard
Lemon juice of 1 lemon
4-5tbsp extra virgin olive oil
Method
1. Bring a large pot of salted water to the boil, half new potatoes and boil until soft. Drain and leave it to completely cool.
2. Meanwhile, cut up the lettuce, thinly slice the gherkins and radishes - mix in a bowl
3. In a blender, mix the dressing ingredients, taste for saltiness, add additional if needed.
4. Pour dressing over salad and toss
5. Serve with soft boiled eggs and enjoy!
