Butter Bean Dip

Ingredients

  • 1 tin of butter beans (drained)

  • 1 garlic clove

  • juice of half a lemon

  • ¾ tbs tahini

  • roughly 4-6tbs of olive oil (extra virgin if you have it)

  • big pinch of salt & pepper (to taste)

  • tbs of fresh thyme

  • 4-6tbs of water (depends how juicy your lemon was)

Method

  • Drain and rinse your beans thoroughly. Add to your food processor with all the other ingredients, beginning with only 4tbs of the oil and the water. Blend once.

  • Then taste and check for thickness and seasoning. If the mixture is still pretty thick, add a couple more tbs of both oil and the water. Check for salt. And blend again. We like ours pretty creamy and not too thick. But this is personal choice. If you prefer to use less oil, just slowly add water (or extra lemon juice) instead. You do want it to slightly emulsify though, so using oil is great.

    Pour into a bowl and garnish with some extra oil and thyme!
